Description:

BIGA is the pre-fermentation dough to be prepared 2 days ahead of time for Detroit style pizza recipes.

Ingredients:

100 ml of water
200 gr of flour
5 gr (1 1/4 tsp) dry yeast

Equipment:

Mixing bowl
Container to refrigerate mixture
Spoon

Directions:

(10 min prep time, 49 hrs total)
Add yeast to flour in mixing bowl and mix with spoon
Gentley add water and mix by hand for 5 minutes
Add mix to container that will be used to refrigerate
Leave at room temp for 1 hour
Transfer to fridge and leave for 48 hr (important)
