Smash Burgers
Description:
Just like the name says, burgers that are smashed when griddle cooked.
Ingredients:
80 20 ground beef
vegetable oil
Burger buns
Cheese and any toppings desired.
Equipment:
griddle
Cheese melter dome.
Warming rack (optional)
parchment paper.
Dough scraper or spatula.
Weighted smashers or equivalent.
Directions:
Pack burgers loosely into balls and add salt and pepper to one side.
Butter and toast buns before cooking burgers. Heat griddle to 450 deg to get a good sear. Put some vegetable oil on griddle and spread around. Place burgers balls with salt and pepper side down, on the griddle. Put salt and pepper on top of the burgers. Use parchment paper and a weighted spatula to make as thin as possible. Cook 2 to 3 minutes per side, when burger edge bubbles up, then flip with dough scraper. Put cheese on top then use dome.
