Description:

Makes 14 - 16 inch pizza. See comments to Youtube link

Ingredients:

To Add on the 600gr. Poolish -
300 ml. Cold Waters
450 gr. Flour 00
200 gr. Semolina (fine)
Extra 3 gr. Dry yeast (5 gr fresh yeast)
30 gr Sea Salt
50 gr Extra virgin Olive Oil

For Pizza.
Regular Parmesan cheese
Shredded mozzarella cheese (fresh mozzarella not recommended, too watery)
Pizza sauce
Sausage or other topping
Oregano
***
For Pizza sauce.
Add pinch of salt to tomato sauce.
Add some oregano.
Add some olive oil

Equipment:

Wooden Madia
Gas oven with pizza stone and heat at max temp for 40 min
Rolling pin
Counter top for working dough
Proofing box
Spatula
Timer.

Directions:

Add cold water to Madia
Add Poolish to water and melt in the Poolish
Add yeast when water is milky
Add Salt to mixture and mix for a few minutes.
Add Semolina and mix in and melt
Add flour and integrate with mixture

Work dough on surface until smooth - 15 to 20 minutes
Add olive oil a little by little (save a little for the end)
Keep working until fully integrated
Dough will be sticky so add rest of Olive oil
Cover with Madia box and wait 30 min and room temp

Add olive oil to hands and make gluten stronger
Put olive oil in bowl and place dough in bowl
Seal bowl and put in refrig for 4 hours.

Dough will have expanded quite a bit.
Make 320 gram dough balls.
Put extra olive oil in proofing box and put dough balls in box
Put a little bit of olive oil on each ball

Seal proofing box and let rest for 1 - 2hrs at room temp

Remove ball from box
Add 50-50 flour and semolina and put in bowl
Flip Dough on top of flour
Put flour on counter top and put dough on counter, throw a little flower on it.
Now press, press, do not stretch, just press
Use rolling pin, hold dough with one hand and press with rolling pin.
Flip over and repeat.
When at 13 in, take off flour and place down. Top part on bottom.
Stretch a little till 14 in.

Add Pizza sauce all the way to the crust.
Put dough on pizza screen (if desired)
Add parmeson cheese
Add fresh shredded mazzerala cheese.
Add topping
Do FAST
Add olive oil
Add oregono

Put in oven and bake till cheese is melting.

Finish with Parmesan cheese on top
