
Vitos Poolish
Description:
A recipe for poolish which is a starter for pizza dough for Neapolitan pizzas. Makes Approx. 4 12 inch pizzas.
Ingredients:
400 ml (1 2/3 cups) of cold water
400 gr (3 1/3 cups) of flour
2 gr (1/2 tsp) dry yeast or 6 gr of fresh yeast
5 gr (2/3 tsp) of honey
Equipment:
Tall 1 gal. plastic container
12 in. Icing knife
Large mixing bowl
Plastic wrap
Kitchen timer and scale
Directions:
(15 min prep time, 16- 24 hrs total)
Add water and yeast into container
Melt water and yeast together
Add honey and melt everything together
Add flour and mix
Mix for 5 minutes
Add plastic wrap to container and add 3 holes
Leave for 1 hour at room temperature
Refrigerate overnight
Minimum of 16 hours to max of 24 hours
